A busy weekend in the kitchen!

Hey there! I find that when I’m around on the weekend with some extra time, I tend to spend it in the kitchen. I wouldn’t say that I’m a great cook or baker, but I love doing both and have turned out some pretty delicious meals and baked goods, so I think that’s enough to keep me happy and motivated to keep trying new things.

This past weekend, I had a blast baking festive treats and a Mexican dinner that was super quick and easy to put together. I think it’s probably the cooler fall weather that makes it so comforting to be in the kitchen with the stove going. Whatever it is, I’ll take it, because I love having fun treats in the apartment!

First up, Chocolate Chip Pumpkin Bread. Sunday morning I woke up and decided I wanted to bake pumpkin bread. I went online and did a quick Google search for “healthy pumpkin bread” and stumbled upon a bunch of delicious looking Cooking Light pumpkin bread recipes. I decided to try the Pecan-Topped Pumpkin Bread, substituting the pecans for chocolate chips. MMMM. A pumpkin bread smelling apartment is a great way to start the day;)

Next up, apple crisp. I told Jessi that I would bring apple crisp to her dinner party since I had a bunch of apples from Saturday’s apple picking. I found a great looking Martha Stewart apple crisp recipe and decided to use it! I can’t say I really like to peel apples, but, there was something very soothing and relaxing about peeling and chopping on Sunday, which made for a much more enjoyable process. Could’ve been the glass of wine I was drinking while I peeled and chopped 😉

If I thought the smell of pumpkin bread was delicious, the smell of apple crisp was unbelievable! I absolutely love all apple desserts, but apple crisp is probably my favorite. I made a few different size dishes so I could keep some, and share more.

Lastly, I made a taco salad for dinner! I didn’t want to make anything big this week since I wouldn’t be around on Tuesday and Thursday through Sunday, so using up some frozen chicken and leftover veggies, adding in beans and taco seasoning was the perfect quick and easy dinner!

I had been craving Mexican for a while, so this totally hit the spot. The only thing missing was cheese. I bought Mexican cheese and everything… can’t believe I forgot to add it 😦 Oh well. Once I slathered everything in salsa I couldn’t even tell the difference 😉

Apple Picking and Enjoying the Weather

Monday is over- woohoo! I hope everyone was able to get out and enjoy the weather this past weekend because it was beautiful! Still a little warmer than I would like (I am ready for fall!), but I really shouldn’t complain since it’s nice to have great weather.

By the time Friday rolled around, I was so bored! I didn’t have any plans after work or teaching last week and worked from home on Friday, so by that point, I was really ready to get out of the house and hang out with people! My sister was flying out the next morning, so I headed to Somerville and we grabbed dinner and drinks at Orleans in Davis Square. We shared the Brie, Mushroom, Caramalized Onions and Spinach burger which, unfortunately, sounded better than it tasted. We had been going back and forth between nachos and that, and totally should’ve gotten the nachos!

Saturday, I got up and taught kickboxing (seriously my favorite way to start a Saturday. Nothing like getting a crazy sweaty cardio class first thing!) and then went to Market Basket to do my small weekly grocery shopping. Boy was that a mistake! It was a million times busier on Saturday than it is on Sundays. Yuck.

My college girlfriends and I had tentatively planned to go apple picking on Saturday and when I sent a text to see if anyone was still interested in going, I had three takers! We were going to go to a place in Stow, MA, but Jessi needed to get something at her parent’s house in Hampton, NH, so Lauren, Jess, Jessi and I ended up going to Apple Crest in Hampton Falls.

I think it’s safe to say that you can’t go apple picking without getting a cider donut, right?! I don’t even like donuts (I know, crazy. I’m a sucker for muffins.), but this thing was absolutely delicious!! Paired with a hot apple cider? Perfect afternoon snack!

After we finished our treats, we hopped on the hay ride that took us to the area of the farm where picking was happening.

Before picking, though, we got a whole speech about how to pick an apple, with the emphasis on “twisting and pulling” the apple from the tree, not just yanking it off. Thank goodness the apple police wasn’t around when this happened

What a fun afternoon! So glad we were able to coordinate schedules 🙂 After we finished picking, we headed to Jessi’s parent’s house and had a glass of wine with her dad before heading back to Boston. Lauren and I had planned to go bowling with Jessi and her boyfriend, but by the time we got back and ate, both Lauren and I lost steam and ended up not going out. Whoops. Sorry Jessi!

Waking up Sunday morning feeling great was well worth being lame and not going out on Saturday night! I made some Chocolate Chip Pumpkin Bread, cleaned, went to Wal Mart, went for a run, did laundry, cooked dinner. All around, a very productive day! I hope to have a few recipes for you later this week!

Avocado Banana Bread

Say, what?! Avocado banana bread? You’re probably thinking that cannot be true, or, if it is, it must not be very good, right? Well, it is true, my friends, and it is a delicious combination.

I came across this recipe years ago over at Live, Laugh, Eat and it has been my “go-to” banana bread recipe ever since. The avocado is a healthy way to help keep the bread moist (ew, I hate that word) and the beauty with this recipe is you can’t really taste the avocado. The banana flavor absolutely trumps the avocado, so don’t worry, you’ll still feel like you’re eating banana bread.

The cooler early morning temps over the weekend, paired with overly ripe bananas & a very ripe avocado, made for a perfect excuse to dust off my baking pans and spend my Sunday morning baking. I tried to follow the recipe, but you’ll see below that I did make some changes.

Avocado Banana Bread

recipe from Live, Laugh, Eat, but slightly adapted by myself

Ingredients:

I halved the recipe… just an FYI

  • 2 med-large bananas
  • 1 med-large avocado
  • 1/2 cup sugar
  • 1/4 cup honey
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 TBSP coconut oil -I didn’t have coconut oil so I used milk (I must have googled that substitution somewhere)
  • 1 tsp lemon juice – Again, I skipped this and am assuming it’s because I added milk? The recipe is old!
  • 1/2 cup skim milk
  • 1 tsp salt
  • 2 eggs, beaten
  • 2 1/4 cups of whole grain flour (I used 1/2 c whole wheat, 1 c oat, 3/4 c spelt)– I used regular ol’ white flour
  • 1/3 cup ground flax seed (I ran out so I didn’t include this)
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 cup chocolate chips

Directions:

Preheat oven to 350* F

1. Mash the banana and avocado. Add in the rest of the ingredients up until the flour, and including the vanilla.

2. Slowly fold in the flour & cinnamon.

3. Add in the chocolate chips.

4. Grease a loaf pan and bake at 350* for about 35-40 minutes.

5. Cut a nice slice, add some butter, and enjoy while it’s still warm!

This was the perfect Sunday morning treat! I haven’t baked since I cut back on sweets and since it was summer and too hot to bake, I didn’t really miss it… that is, up until I started baking on Sunday morning and realized how much I enjoy it!

Happy Birthday, Mom! (and other random things)

Today is a very special day as it is Momma Gag’s birthday!!! I’m sure by the time she’s read this blog post, she has already had a day where she’s been spoiled by all of her friends, but she really deserves nothing less! I’m sure most of you regular B2B readers have seen my mom’s comments, which she does on almost every post, and I cannot thank her enough for her continued support in all my crazy adventures (there’s a new one that I’ll be sharing soon!!). I especially appreciate her always being there when I’ve “hit my wall” and call her in tears during the midst of a meltdown… there’s just something about talking to her that makes me feel SO MUCH BETTER! So mom, thank you for always being there for me and for being the cutest, sweetest, most fun mom around!

Anyway! I feel like I have lots of random things I want to share with you, mostly lots of pictures of sweet Emma at her 1st birthday party… gosh I just love that little girl. I headed home after teaching kickboxing on Saturday morning (I know, I know… you all probably think I go home all the time, but I hadn’t been home since the 4th of July! And, I love being home in Maine. Period. End of story:) ) and got caught in ridiculous amounts of traffic. Literally, I couldn’t even believe how much traffic there was. Shouldn’t people have been on the road early on Saturday to get to their vacation spots? Jeesh!

I finally made it to the party and couldn’t wait to snuggle all of my favorite babies! Zeke is literally a baby, not a newborn anymore. He has grown SO MUCH!

Emma was cruising around everywhere and watching her and Rozzie play together made me laugh so hard!

I so wanted to do the exact same thing, but people would have gave me weird looks so I contained myself 😉

After that, I met up with an old friend for dinner. We grabbed sushi and I would show you pictures, but there was really nothing picture-worthy about the food or drinks so I’ll spare you. The whole experience was hilarious, though, because nothing went right. One example, was when I asked the waitress what her favorite roll was (because I always do this when I go to restaurants- I want to know what the staff eats) and she responded “I don’t like fish so I’m not a good one to ask”. Ha! Why are you working at a sushi restaurant, then?! Anyway! Fun dinner other than that 🙂

Sunday was an absolutely beautiful day in Maine. Summer without humidity is the most amazing thing! I had Danielle take pictures and videos for me that I used in my burpee post that I posted yesterday and then we went on a nice walk/jog around Shapleigh. It was fun to do that together!

We spent some of the afternoon at the Mahoney’s pool (my favorite place to spend hot, summer days!) and then grabbed an ice cream before hitting the road. It made me remember how much I love ice cream 🙂

Oh, except for I forgot to tell you that my parents got a new kitten! Renee (little Renny, as we call her) is just the sweetest little girl ever! So fun to play with a kitten instead of a big (fat) cat like Charlie!

Hot in the City. Literally.

Hey everyone! How are you?? I am back from a wonderful little getaway at a work conference in Stowe, VT from Tuesday-Friday. The conference was held during a great week; being in VT and in a hotel during this crazy heat spell was amazing! Even if the temp was as high there as it is back in Boston (which, it wasn’t), there’s something about being surrounded by beautiful mountains that makes tolerating the heat a little more bearable. Big, big thanks to Athena and Rachel for helping me keep you all entertained while I was away!

Anyway! On Monday I had a long day at work trying to get everything ready for my week away. Doesn’t it always seem like work gets so much busier when you’re about to be out of the office for any amount of time?? By the time I left work, I knew I was in need of a solid workout. I knew I would workout while in VT, but I wasn’t sure how long or strong or intense they would be, so I wanted to make sure I got in at least one good workout during the week! And good workout it was! I hopped on the elliptical to warm up and then I created a circuit that I did 4 times through:

  • 500M row
  • 60 seconds ropes (If you’re not familiar, check out this video. killer!)
  • 60 seconds kettlebell swings
  • 1-legged push-ups up and down the ladder (a ladder is painted on the turf)
  • 60 seconds plank pikes with feet in TRX straps

I did a few more ab exercises and a few shoulder exercises before calling it a day. I was SPENT! My knees were irritated from the turf, my hands were getting calluses. I call that a good day at the gym 😉

Post gym, I came home, watered my garden really well and then made myself the easiest dinner alive:

English Muffin Pizza’s. Doesn’t get much better than that, right?! Brings me back to my childhood big time!

I got up early Tuesday to A. work out and B. try to beat the heat for my workout. I was feeling pretty sore from my Sunday and Monday workouts, so I ended up doing a jump rope and ab circuit which was perfect!

After my workout, I showered and worked from home until it was time to pick my coworker, Tim, up at the airport. To ensure that we had healthy snacks for the road, I went shopping over the weekend and stocked up.

I also brought a few peaches and a yogurt. I don’t have a huge appetite in one sitting, but I sure do love to snack! It helps keep me from being “hangry”, which, if anyone has seen the “hangry Monique”, I think you can agree she’s someone we all would like to avoid 😉 These snacks kept both of us totally satisfied and the 3 hour and 20 minute trip almost flew by! I went to Saint Michael’s College in Colchester, VT, so the ride up 89 (both through New Hampshire and Vermont) is one I could likely do with my eyes closed. Tim had never been in that area (he lives in Florida, originally from NY), so he was totally in awe of all the mountains and trees and beautiful scenery.

Driving past the Ben and Jerry’s Factory, Cabot Cheese store and Pie In The Sky totally brought me back to my college years when my girlfriends and I would make the short-ish trip down to Stowe to (basically) eat our way through it. Ah, the good ol’ days! Anyway, it was fun reminiscing. #ilovermont 🙂

Well, that about does it for me today! I am teaching my 10am kickboxing class at the Oak Square YMCA and then babysitting for Trent and Lila again from 1-??? Pending on how I feel after that, I am going to try to make it to a BBQ at Rachel and Dan’s apartment. I hope you all have a great Saturday!!
