Weekending: Massages, Farmer’s Market, Lots of Shopping & Grill 23

Good morning! It’s time to talk about the weekend! I don’t know about you, but I feel like Tuesdays are a lot harder than Mondays. I’m not exactly sure why, but I think it has to do with the fact that I generally just roll into Mondays without much thought and I’m usually pretty busy, so the day goes by fast. Tuesdays, though, are the days where everything from the weekend tends to catch up with me. It’s terrible getting out of bed, I’m yawning all day, and I have to really give myself a pep talk to get a workout in, because I know that’s exactly what I need to get some energy.

I treated RM and myself to massages at Exhale Spa. Per usual, the experience was perfect: relaxing, calming and just a really nice escape from reality. After our massages, we headed to Whole Foods to get dinner: salmon, spinach and carrots. Paired with a nice Malbec and you have a happy Monique.

We started Saturday morning by making a trip to the Waltham Farmers Market. Athena and Ashley- thanks for the great recommendation! RM got some meat and I came home with a bunch of veggies, for half the cost of what I’d pay at the store. The only annoying this is that I could be getting these from my dad for free if I was going home anytime soon!

We also stopped at Whole Foods again for weekly groceries and I splurged on a couple of festive treats. Pumpkin Fig granola and Pumpkin Cranberry “chips”? Yes, please.

After lunch, we headed to Assembly Place to check out the new stores. Although it was beyond crowded (hello, rainy Saturday), we were able to shop around enough to get some great deals. I forgot to take pics of everything, but here’s a pic of one shirt I got, as well as the necklace RM gave me for our anniversary.

He also got me a gorgeous handmade frame. These are really special things because they are handmade in India. I can’t wait to get a picture of us to put in the frame.

Although it was really tempting to stay in on Saturday night because of the rain, we made our way to dinner at Grill 23, which is one of the nice steak houses in the city that I had not been to yet. Per usual, we scored seats at the bar and enjoyed drinks, oysters and a delicious meal.

Not the best pic, but oh well! It was a great dinner and so fun to finally have a weekend date night!

We went for a nice walk on Sunday and then headed into the city for some more shopping. It was too nice to be stuck inside all day!

Later that evening, we came back to my place so I could do my Sunday meal prep. I had a lot going on: stuffed peppers, meatballs, acorn squash, roasted veggies, sautéed veggies, quinoa and kale. #thankgoodnessforwine

I also whipped up a batch of these beauties. Grain free pumpkin chocolate chip muffins? Ummm, yes. I added in walnuts, coconut flakes and did half almond meal, half coconut flour and they came out SO good. Such a healthy, tasty treat!

And, there you have it. Another weekend roundup in the books. Although we were on the go a lot all weekend, we didn’t have a timeframe which was wonderful. We did what we wanted when we wanted- if only all weekends could be like that!

Roasted Brussels Sprouts, Butternut Squash and Chicken with a Laughing Cow Cheese Sauce

Wowzers. I know I say this a lot, but my “Sunday Meal” this week was seriously good. Like, so, so good. I blame it on the Laughing Cow cheese sauce. My mom is a lover of white sauces, and while I enjoy them, they aren’t the first thing I think of when I want a “sauce” for my meal. However, when I thought about the ingredients in this meal, I realized a white sauce would be perfect.  My idea for a white sauce was amplified when I opened my fridge and saw the sun-dried tomato Laughing Cow cheese wedges she had given me. Bingo! Combining those with skim milk would be the perfect “white” sauce.

In addition to the cheese sauce, I have recently become a huge fan of dishes with Brussels Sprouts and butternut squash in them. My sister found a recipe including those veggies that we made for Thanksgiving and it was SO good. I loved roasting the two together for this meal (with onions, because onions make everything better), and am not sure why I don’t roast veggies more often. It’s so easy and such a nice thing to have around the house throughout the week.

Roasted Brussels Sprouts, Butternut Squash and Chicken with a Laughing Cow cheese sauce

Ingredients (I didn’t measure how much I cooked, so I’m just going to list out approximates of what I used)

  • Brussels Sprouts- 1-2 cups after I chopped them up
  • Butternut Squash- 1-2 cups after I chopped it up
  • Onion- about 1 cup
  • Salt & Pepper to taste
  • Herbs/seasonings as desired
  • 2-4 TBSP EVOO
  • Quinoa- I cooked 3/4 of a cup of dried quinoa with 1.5 cups of water
  • Chicken- 1 cooked 4 small chicken breast tenders
  • Laughing Cow cheese wedges- 1 used 2 of the Mozzarella, sun-dried tomato and basil ones
  • 2-4 TBSP skim milk

Directions

1. Pre-heat oven to 375*. Cook the quinoa according to the package. While that is cooking, cut your Brussels sprouts, butternut squash and onions and place on a baking sheet. Coat with EVOO (however much you want to use), salt & pepper and herbs and seasonings. Bake for 30-40 minutes, stirring occasionally, until the squash is soft and cooked through.

2. Prepare your chicken (I sprinkled salt, pepper and seasonings) and be ready to place that in the oven when you have about 15 minutes left on the veggies.

3. Place the Laughing Cow wedges into a small sauce pan (how cute is this one that my mom got me? It’s so little!)- I used 2, just as an FYI. As they start to melt, add in your milk. I started with 2 tbsp. and added more in gradually as necessary. Make sure you whisk continuously so as it doesn’t burn! Once it’s thickened up a bit, remove from the stove. At this point, your quinoa should be done, so place that in a bowl, top with the roasted veggies, chicken and sauce.

I forgot to say that I added some pumpkin seeds to the top, which provided a nice little crunch to the meal!

As I began to eat my way through this bowl (which is also new! I got 2 for free by saving points at Shaw’s during their Rachael Ray dishware promotion), I realized how FILLING this meal was. I couldn’t believe it, but since it was all healthy/good for you foods, I kept eating 😉

If there’s one thing you make out of this recipe, please have it be the sauce… and roasted veggies!

Lastly, I wanted to thank my mom for this awesome Rachael Ray Garbage Bowl– it is perfect for me because I usually just use a plastic bag to collect trash as I cook (I hate making multiple trips to the trash can- interrupts my flow!), which can be wasteful. This is the best replacement, not to mention it’s pretty to keep on the counter!

Ok, I really need a grill…

Yeah, I mean, this meal came out SO good, but I think it would have totally topped the charts had I been able to cook it on a grill. Next gym paychecks go to: buying a grill! I don’t know how we survived all of last spring/summer/fall sans a grill, but I know that I won’t be able to do that this year. Maybe I can get my dad to go shopping with me for one (hint, hint).

Anyway, before I get into the details of the meal I made on Tuesday night, let’s chat about how much I have learned to LOVE Tuesday’s. Don’t get me wrong, I love teaching so much and love my current schedule of Monday’s, Wednesday’s, Thursday’s (double) and every other Saturday, but there is really nothing like the feeling I have all day on Tuesday knowing that I can go home right after work.  I also like that I have the option of working out or taking a rest day, pending on what I have going on after work, what my week of workouts looks like, and how I am feeling physically. The nice weather makes me want to work out more (ie: go running, walking, anything outside), so on Tuesday I got home relatively early (6:15- that never happens) and decided that I could squeeze in a quick 30 minute workout, focusing mostly on strength and core. 32 minutes later, I was done, ready for a shower, glass of wine and a meal I had planned out in my head since Sunday, so let’s get to it, right?!

We New Englanders are finally experiencing the spring weather we have been waiting for since, oh, the past couple of months.  Along with the warmer, sunnier weather comes my craving for all things associated with grilling and BBQ’ing, so I decided to take one of my favorite grilling meals and make it in my oven.  And, you know what? It came out WAY better than I had hoped it would. I marinated the chicken overnight and I cannot describe in words how flavorful it was.  The shrimp was just OK, but the veggies, especially the mushrooms, more than made up for it. And, what’s not to love about corn on the cob and baked sweet potatoes?!

Chicken, Shrimp & Veggie Kabobs

For the chicken marinade:

  • 4 chicken breast tenders
  • Juice of 1/2 a lemon
  • ~1/4-1/3 cup white wine
  • ~1 tsp. ground pepper
  • ~1/2 tsp. sea salt
  • Few heavy shakes of Mrs. Dash

Veggies:

I cut up peppers, onion, zucchini, summer squash and mushrooms.  I didn’t measure, but I eye-balled about how many I thought I would need to make the skewers figuring there was really no right or wrong with how many I used.

Directions

1. Create the lemon-pepper marinade the night before and let the chicken sit in it for about 24 hours to get that really delicious lemon-pepper taste.

0292. The next day, when you’re ready to make the meal, pour yourself a glass of vino, get your apron on, and get to work!

3. Pre-heat your oven to 375*, wrap your sweet potato in aluminum foil and place it in the oven right on the metal racks.

4. Cut up your veggies and chicken and arrange everything so you can easily skewer however you desire.

031I created my kabobs by alternating veggies and chicken on some, veggies and shrimp on some and then for the leftover chicken, I just put all of the pieces on one skewer. I sprinkled on a little more pepper, sea salt, garlic powder and Mrs. Dash once the skewers were created.

5. Place in the oven and bake for about 20 minutes (watch closely because you could need more or less time depending on how you cut your veggies and chicken). While the kabobs are cooking, steam your corn.  I also had to finish off my baked potato in the microwave since I didn’t start it early enough.

032When everything is done, place on a plate, add some butter to your corn and sweet potato (yes, this is a must) and enjoy!

035Look at those colors!! My mouth was so happy as it tasted all of the different flavors in this dish, especially the chicken. Wow, was that good! I am so excited for leftovers and think I will probably put the kabobs on a salad for a work lunch this week.

More Weekend Catch-Up

Hi! How’s everyone doing? Did you survive Monday? I always feel a little better once Monday is over!

Since I didn’t do much weekend recapping except for Sara’s shower, I wanted to fill you in now! Everyone left our place by 6pm on Saturday and at that point, my sister and I were ready to get out of the house. I had a $20 OpenTable gift certificate and she had a $10 UBER credit, so we decided to take advantage of both and go grab dinner somewhere. Most restaurants were pretty busy, but one of our go-to favorite restaurants just happened to have some availability! I stumbled upon Anthem Restaurant in Faneuil Hall a few winters ago when I was planning Rachel’s bachelorette party and we have been in love with it ever since! I’ve taken my parents there, work friends there, college friends there… Pretty much any time we don’t know where to go, but want good atmosphere and good food, we go there.

Anyway! Since we were not too hungry, we ordered some wine and chatted before placing our meal order.

042Once our stomachs began to rumble a little, we placed an order of their Boston Bibb salad and Margarita Pizza. Nothing too heavy, but enough to satisfy us!

My friend and former co-worker, JP, met us out, which is always a good time. He and my sister can be bad news sometimes, though, because they egg each other on in drinking competitions and whatnot. Youngin’s, I tell ya!

I woke up Sunday feeling much better than I thought I would, which is always a nice surprise. After blogging and eating breakfast, I decided to take advantage of the gorgeous weather and go for a walk. Danielle joined me so it was nice to have someone to talk to! We covered just about 2 miles and then I worked to get my garden ready for planting. Let me tell you, raking and tilling and pulling weeds is a great upper body workout!

050Even though I could have stayed out in the sun and warm weather all day, I had to go in and shower and get ready for my friend Christy’s bridal shower. It was at the Daily Catch in the Seaport and it was absolutely lovely. I had never been to that location, but it was so much nicer than I had imagined. Plus, the view of the harbor on a gorgeous sunny day didn’t hurt, either. It was great to get to catch up with a bunch of my college girlfriends and be a part of Christy’s special day. It was a surprise bridal shower and it seemed like Christy was 100% surprised!

I didn’t get many pictures, but I did grab some of the adorable center pieces that my friend, Amy, made, as well as a delicious mimosa and the menu.

058It was a 3-course meal and everything that I tried was really good! I got the caprese salad to start, fish n chips for my meal (everyone deserves a splurge day or meal!) and obviously didn’t turn down a piece of cake (I am a sucker for all things dessert, especially when it involves frosting.).

After the bridal shower ended, I picked up Danielle and we hit up the grocery store. I had all intentions of making a nice Sunday dinner, but when I looked in the fridge and saw how many leftovers we had from the shower on Saturday, I decided to postpone my meal for tonight (only night I don’t teach, so I actually have time to make a nice dinner after work!). This was a big move for me… I ALWAYS make a “Sunday Dinner,” so when I don’t, something feels so off!

And, I think that about sums it up! Weekends being surrounded by best friends and family are the best, in my book, and nice weather is just icing on the cake (pun intended!).

Sunday Dinner- Pinot Grigio Chicken with a Honey Citrus Glaze

Hey everyone! How was your Sunday? The weather- again- didn’t end up being what I thought it was going to be, but that’s ok. I mean, it has to get warmer soon, right?

Even when I try to make Sunday’s relaxed, a wide open schedule stresses me out and without even meaning to, I end up filling it with random things. Is anyone else like this? For instance, yesterday I got up, had breakfast, blogged, went grocery shopping, made a delicious lunch, went to the mall, prepped some blog posts, showered, made dinner, did my April Arms Challenge for the day… no wonder why I am tired! The thing is, I never once felt stressed or rushed or anxious. Yesterday was a great day and a great mix of being on my own schedule of things I WANTED to do and some things that I had to do.

After facing the masses and masses of people at Market Basket, Danielle and I got to making a nice lunch. This is kind of weird for a Sunday, but since we didn’t have any leftovers and had lots of groceries, it was a great idea.  I cooked up a bunch of chicken and made a salad for lunch, as well as a few for lunches for the beginning of the week.

Danielle made her new favorite thing to make: homemade Mac N Cheese! She added broccoli and buffalo chicken (leftover from Friday night pizza night) and it was delicious! My mom had gotten me the cutest little pot thing and it was perfect for the Mac N Cheese.

I went to the Cambridgeside Galleria for a few things (got my birthday dress at the first store I went to- on sale- amazing!!), but wasn’t really in the mood to poke around so I didn’t stay long. When I got home, I prepped dinner and then got busy with the Sunday circuit for the April Arms Challenge.  Since I was tired and sore from a tought week of workouts, I just did a 5 minute warm up and cool down and 2 rounds of the 3-2-1 circuit. I also switched up the 3 mins of cardio to a kickboxing cardio move that felt better for my shoulder and did the same with the reverse curls (something wasn’t working with them, which I was so bummed about because I love that move!).

Ok, ok, let’s get to dinner, shall we?

I usually make up my own recipes for the blog, but when I saw a recipe for Pinot Grigio Chicken over at Eat, Live, Run, I knew I wanted to make it soon. Another deciding factor was the fact that we just happened to have an open bottle of Pinot Grigio in the fridge:) I followed the recipe to a T (except for the fact that I had to use drumsticks since Market Basket was out of chicken breasts), so go on over to Eat, Live, Run and check it out!

On the side, I roasted some asparagus (all I did was spray them with Pam spray and give a few shakes of garlic crumbles, sea salt, pepper, and lemon juice) and cooked up some harvest grains blend quinoa.  Since we had extra white sauce from the Mac N Cheese, we put a little of it on the asparagus, which was a great idea!

I absolutely loved this meal! It was very different from what I usually make and I only wish that I could’ve grilled the chicken instead of baking it! I was a little nervous that it would be TOO citrus-y (is that a word?), but it was not at all! I took the skin off of the drumsticks and poked some holes in them so that the marinade would be absorbed, which was perfect because we didn’t lose all the flavor when peeling off the skin before eating. I have just enough left over for dinner tomorrow night- score for me!
