Zucchini & Summer Squash Parmesan

Hey there! Are you sick of me posting recipes revolving around zucchini and summer squash? I am 😉 This will be the last one- promise! I have just about used up all of the zucchini and summer squash that I grew in my garden, which is a really good feeling!

Both my mom and her friend, Jean (not to be confused with her other friend, Jeanne, haha), suggested that I make zucchini parmesan back when I posted my Summer Squash and Zucchini Lasagna recipe a few weeks ago, so I decided it was finally time to do that! I had a perfect zucchini to use (not too small and not obscenely big) and also decided to cut open one of the HUGE summer squash to see if it would be edible; good news- it was!

Even though the zucchini and summer squash parm would have been enough if they were just placed atop pasta, I’m trying to up my protein (still trying to figure out what protein powder to buy!) so I decided to make a meat sauce, too. Now, when I say “make a meat sauce” all I really mean is browning ground turkey and adding it to a jar of store-bought sauce. I swear, I will make REAL homemade sauce, but when you’re in a time crunch in the middle of the week, cheating a little is necessary. I also decided to add MORE veggies to the sauce because we can never have too many veggies, right? I put together the meat and veggie sauce right away so that it could simmer on the stove while I prepared the rest of the meal; this is a great way to enhance all the flavors and thicken everything up so it feels like you’re really eating homemade sauce.

Zucchini and Summer Squash Parmesan with a Veggie and Meat Sauce

Ingredients

  • 1/2 lb ground turkey (or beef, if you prefer)
  • 1 large zucchini
  • 1 large summer squash
  • 1 small onion, chopped
  • 1 cup green pepper, chopped
  • 1 cup broccoli, chopped
  • 1/2 a box of whole wheat spaghetti
  • 1/2 cup white wine
  • 2 cups marinara sauce
  • 2 eggs
  • 1/2-1 cup panko bread crumbs
  • fresh mozzarella cheese
  • herbs/seasonings

1. Bring a pot of water to boil and cook the spaghetti according to the directions on the back. While that is cooking, chop your veggies and cook them until they are mostly cooked (about 5-8 minutes). Remove from the pan and add the ground turkey to that same pan and cook until the meat is no longer pink.

2. Add 2 cups of marinara sauce, 1/2 cup of white wine, veggies and ground turkey to a pot. Add about 2 tbsp of Oregano, in addition to any other herbs/seasonings you may want to add (sea salt, pepper, Italian seasoning, etc.). Keep the heat low and let the sauce simmer while you prepare the zucchini and summer squash medallions.

3. Slice your zucchini and summer squash into 1/4-1/2 inch slices (you want them to be thick enough to feel “meaty”, for a lack of better words).

4. Whisk the eggs together in 1 bowl and add the panko bread crumbs to another. Take each piece of zucchini and summer squash and coat them in the eggs first and then the panko bread crumbs. Meanwhile, have a big pan (coated with EVOO) heating on the stove. I like to brown up each side of the medallions to “crisp” them up before baking them in the oven. I did about 3 minutes on each side.

5. Once they are all browned, layer them in a casserole dish, placing thin layers of mozzarella cheese in between layers (you can never have too much cheese!). Bake at 350* for about 30 minutes, or until the zucchini and summer squash are cooked. Broil at the end for a few minutes to brown up the cheese.

6. Place a serving of spaghetti on the bottom of a bowl, top with the veggie/meat sauce and then the zucchini and summer squash parmesan medallions. I also added some red pepper flakes because I love them!

This meal was delicious! There’s just something about eating veggies from your own garden that is really cool, and fresh mozzarella makes everything better 😉 Already looking forward to leftovers!

Wednesday Workout: Mini Circuit Workout

Hi there! I hope you all enjoyed last week’s “Wednesday Workout” post, which focused on burpees! I heart burpees. A lot.

Anyway! I wanted to give you an actual workout to try this week. I taught this in my SHRED class and really enjoyed it. The workout itself actually came from Fitnessista, but I added my own touches with the cardio blasts and changing up the reps a bit.

Mini Circuit Workout

Everything should be pretty much self-explanatory, but if you have questions, obviously leave me a comment or shoot me an email.  For the step-ups, I had my members stack 6 risers under each side of the bench and hold a weight while they stepped up. This is KILLER for the quads and glutes; I’m totally obsessed with step-ups now. I gave the class the option to do whatever burpee they felt like doing- so nice of me, right?! 😉

Let me know if you try this! I foresee this being a new “go to” at-home workout as you don’t need much equipment to complete it.

Christy and Jamie’s Wedding

If you follow me on Instagram, then you probably already know that I was lucky enough to go to Christy and Jamie’s wedding on Saturday, which was one of the best weddings I’ve been to in a long time! What made it even nicer was the fact that it was right in the city, so none of us had to travel or rent hotel rooms- win, win!

The ceremony was held at St. Mary Church in Charlestown, MA and since my friends Jessi and Cristina live in Charlestown, they invited us over beforehand. They had snacks and bubbly- two of my favorite things 😉

The ceremony was at 2pm so we got there a little early to chat with friends and take pictures- duh 😉

The church was beautiful! Catholic churches are nothing new for me, but I always love seeing how pretty they are in the inside.

Two of our friends, Nikia and Amy, were bridesmaids in the wedding and they looked beautiful!

But, no offense girls, Christy stole the show. She was stunning! From the dress to her hair to her flowers to her makeup, she was everything a bride should be! I always watch the groom’s expression when the bride first walks in because I love to see their first reaction. Jamie was literally beaming from ear to ear as Christy walked down the aisle. Look at her, though! So pretty.

I was seriously obsessed with her dress. I think trains really make a dress and the lace and little cap sleeves/straps were perfect.

The priest was awesome! He had us engaged and laughing throughout the ceremony (yes, it was a fully Catholic mass- it felt good to be there. I should do it more often). About an hour later, Christy and Jamie walked out as husband and wife.

Since we had about an hour and a half until the reception started, we went back to Jessi and Cristina’s to hang out and drink more champagne.

The reception was held at the Harvard Club of Boston, which was amazing.

Love all these ladies! The reception hour flew by and before we knew it, it was time to be seated for dinner. The bridal party entrances are one of my favorite parts of weddings. I love seeing what people come up with for their entrance “skit”.

From that point on, I knew it was going to be a really fun reception. We started dancing before dinner was served, which is something I’ve never seen at a wedding. It was awesome! I’m glad we did end up sitting down to eat, though, as the food was delicious. Crabmeat stuffed shrimp?! Amazing!

I didn’t get many pictures of Christy, mostly because she was dancing the whole night! I think it’s so fun when the bride and groom spend as much time on the dance floor as everyone else!

Big props to Christy and Jamie for not doing any cheesy wedding songs or games- they just had a phenomenal band (literally, I was obsessed with them!) and let people dance! And dancing we did; the dance floor was literally packed the entire night, which I think is the number one sign of a good wedding, right?! We had circles and dance offs and trains. They had a box of leis and fun sunglasses so by the end of the night it looked like we were all going on a Hawaiian vacation!

Christy and Jamie organized a post-reception gathering at Carrie Nation, which was a bar I’ve never been to. I think it’s such a great idea when there is a post-reception party because I’m generally not ready for the fun to end when the reception ends! I didn’t stay long at the after-party, which was probably a good thing. I had had enough to drink at that point 😉

All in all, the entire day and wedding was wonderful. Christy and Jamie- thank you so much for having me be a part of your special day! You two have something very special- here’s to many more memories!

Weekly Workouts- A really great week of workouts

Good morning! Phew! What a weekend:) Christy and Jamie’s wedding was an absolute BLAST- I’ll post a full recap later this week!

Last week was an awesome week of workouts. I got in some of my workouts in the morning, went to a UXF Burn training, subbed a class and did LOTS of dancing at the wedding. I was really happy for my long-overdue rest day yesterday 🙂

Last Week’s Workouts

  • Monday- I got up and ran 3.5 fairly speedy miles. I’m usually much slower when I run in the morning (10-20 seconds/mile slower), but on Monday I ran a 5K just 4 seconds slower than my 5K PR time. Weird, but I’ll take it! Per usual, after my run, I did some core strength.

  • Tuesday- I got up to workout before work again- loved it! I did this workout, which seemed much harder than it did when I taught it. I think it’s because I’m never fully awake when I workout in the morning so I don’t have the energy I do when I workout after work.
  • Wednesday- I ran a nice 5K before teaching. The view of the Charles never gets old! Map My Run said I ran it in less than 26 minutes, but my watch said around 26:15, so I’m not sure if I PR’d or not. After I ran, I taught an awful UXF Burn class. I say awful because it was really not fun… the moves were hard and I was struggling! haha I hope I wasn’t the only one who felt that way 😉

  • Thursday- I taught a fun SHRED workout (I’ll post it Wednesday!) and then kickboxing. We worked so hard in kickboxing- holy high intensity cardio class!
  • Friday- I went to a UXF Burn training- we are releasing a new format and I’m SO excited about it 🙂 We went through and did workouts of the original versions and then we did the new 3-2-1 format workout and core workout. Working out with instructors is SO different- we all push ourselves much more than we would normally. I was pretty sore on Saturday!

  • Saturday- I subbed a SHRED class at the Central Square BSC. Before teaching, I did 30 minutes on the elliptical to loosen up my tight muscles. The class was SO FUN! So much energy. Loved it! My second workout of the day was most certainly dancing at Christy and Jamie’s wedding… you know it’s a good wedding when you start dancing BEFORE dinner is served 😉
  • Sunday- Rest day! I hadn’t taken a full rest day in 8 or 9 days which is really bad 😦

This Week’s Workouts

  • Monday- I will have hopefully run by the time this post goes up! If I don’t get up to workout, I’ll do something after work.
  • Tuesday- I’m going to try and workout in the morning again. I want to start moving stuff to my new apartment this week so it would be nice to have a free night.
  • Wednesday- Probably a run then teaching UXF Burn. I am introducing the new format this week- can’t wait to see the faces of the members when I tell them to do 3 minutes of jump squats 😉
  • Thursday- The usual! SHRED and Cardio Kickboxing.
  • Friday- I think I’ll rest on Friday since I have to teach on Saturday and I’ll be moving all weekend… that will be a workout!
  • Saturday- It’s my Saturday to teach kickboxing at the Y! Can’t wait! My parents are coming down after to help me move… yuck!
  • Sunday- Moving!

10 Things To Do Before Summer Is Over

Hey Friends! Happy Friday! I hope you’ve all had a good week.  Mine was relatively uneventful, but I worked out before work on Monday and Tuesday and it was SO NICE to have some extra time after work to do, well, whatever I wanted! My Tuesday workout wasn’t terrific (I did one of my recent UXF workouts and it is really hard to do those first thing when I don’t have the energy I do at the end of the day!), but it was something so that’s all that matters!

Anyway, I don’t know if anyone else has noticed, but ever since August 1st came around, it seems like everyone is officially doing a “summer countdown”. I don’t know about you, but I am NOT ready to even think about summer being over! I know I’m probably not alone when I say this, but I cannot believe how fast the summer has FLOWN by. But! Don’t worry, there’s still plenty of time to do fun summer things before we officially step into fall.

10 Things To Do Before Summer Is Over

1. Go to a local produce stand and buy fresh summer veggies! Or, visit a friend who has a garden; I’m sure they would love to share the fruits (err, veggies) of their labor. You’ll be amazed at how fresh your salads and meals taste when you eat freshly and locally grown veggies.

2. Go out on an ice cream adventure! There’s something about going to an ice cream store just to get an ice cream cone. And when I say “ice cream cone”, I mean just that: get real, full fat ice cream. None of that “fro-yo” crap (ok, jk, it’s not crap, but get the good stuff!).

3. Get outside and enjoy the weather! Go for a run along the water or a pretty trail, grab a friend and go for a power walk to catch up, get an iced coffee and stroll through your city or town. Soak up the nice weather while we still have it!

4. Find a new beach, grab a good book or magazine and a cooler and take an afternoon for yourself to relax and chill out.

5. Go shopping! Stores are FULL of summer sales right now, but summer isn’t over yet so everything that’s on sale is still great to wear for the rest of the season. And, getting a good deal is a great feeling 😉

6. Check out a farmers market and talk with the vendors. They always have loads of information to share! If you’re in the Boston area, you have to check out the SOWA Open Market in the South End. I have only been once, but I’m dying to get back!

7. Find an outdoor workout class or boot camp to take. My friend, Athena recently went to an outdoor CrossFit Class that looked like SO MUCH fun!

8. Find a fun roof deck or outside bar to go to and spend an afternoon there! Day drink and push all your other “to-do’s” aside! Take advantage of nice weather and the great mood it puts people in.

9. “Summer clean”. Go through your closet and bureau and clean out everything you haven’t worn in the past year. I recently did this and couldn’t believe how much I could donate!

10. Make a fun summer cocktail. Sangria is always a good choice and Rachel provided a delicious recipe in her Guest Post a few weeks ago!

Focus on the now and stop your “days left of summer” countdown. That little trip you’ve been putting on? Plan it! That recipe you’ve wanted to try? Make it! The new restaurant you’ve been wanting to go to? Go! Enjoy the rest of your summer!
