Chicken & Veggie Zoodles- Scampi Style

Good morning! It’s hard to believe that we are entering our last full week of August. On the one hand, this summer has gone by in a blur, but on the other, I feel like it’s been one of the most relaxing summers I’ve had in a long time. We only had 1 wedding, we didn’t have any big trips planned and we were able to get to the Cape for a few nice weekends. Even though I always want a nice, sunny weekend, this past one- rainy/gloomy/humid weather and all- was actually welcomed.

It was nice to be able to do stuff inside my apartment rather than go to the beach! Plus, my parents came down on Saturday for the night to help my sister and me with some packing and to celebrate my dad’s birthday. We ordered lunch when they got here on Saturday and then headed to Piers Park to hang out and relax before going food shopping in order to make dinner on Saturday night. We ended up grilling burgers- some were beef/veal/pork and the others were plan ol’ beef burgers. So good! On Sunday , mom and I went to church and then we all helped pack up some stuff that they were gracious enough to take home for us. All in all, it was a great weekend and so nice to just be home. I can’t remember the last time I woke up in my apartment on a Sunday and then had most of the day to do whatever the heck I wanted to do (which, consisted of watching part of a movie, doing a quickie workout, cooking, reading and blogging).

Anyway! The point of this post was to share an easy “zoodle” recipe with you. It seems like spiralizers are all the rage these days, and I can’t lie- I love using mine! I’ve used it for carrots, zucchini and summer squash, but zucchini is my favorite. This recipe came together pretty quickly and I enjoyed it all week. Loaded with wine and garlic and veggies, you can’t really go wrong 😉

Ingredients- rough estimate- I didn’t measure 🙂

  • 2 large zucchinis, spiralized
  • 1 ear of corn, steamed and kernels cut off the cob
  • handful of small Brussels sprouts- cut in half
  • 4 chicken breast tenders
  • 2 tbsp. pine nuts (or nut of choice)
  • 2 cloves of garlic
  • 1/4 cup EVOO
  • 1/4 cup white wine
  • Juice of 1 lemon
  • S&P to taste

Directions

  1. Steam the corn & cut the kernels off. Meanwhile, cut the Brussels sprouts and steam for 2-3 minutes to speed up the cooking time.
  2. Spiralize your zucchini and set aside. Head a skillet at medium heat and let the oil, garlic, wine and lemon juice simmer.
  3. Once it’s simmerd a bit, add in the steamed Brussels sprouts and let them cook for a bit. Once they are mostly soft, add in the pine nuts and corn and raw zucchini. While that is cooking, heat up another skillet and cook the chicken.
  4. Once the chicken is cooked, chop it up and add it to the veggies.

I’ll be honest, I had no idea what I was creating when I started this dish- I just knew I had a bunch of things in my fridge that I needed to use up so I went with it and I have to say- I’m pretty happy with the end result!

I loved the flavor combination as well as the bright green and yellow colors- and the slight crunch from the pine nuts was great for a texture queen like myself.

I ended up even eating it cold throughout the week and it tasted just as good as when it was nice and hot.

I tend to eat more veggies in the summer (because everything is fresh and they are light and easy), and this meal totally hit the spot in that department. Nothing like quick, easy & healthy meals to throw together and eat throughout the week!

Weekending: Decking it, #StreetSweat workout, Date night & SoulCycle

Good morning! Lots of fun things to recap from the weekend, so let’s get right to it, shall we?

On Thursday night, RM and I met up to go for a walk after work. We hadn’t seen much of each other over the week so we figured that catching up and getting in some movement was a way to kill two birds with one stone! We love going for walks together and it was such a nice night! Piers Park is so pretty.

After work on Friday, I treated myself to a pedicure. I got a funky mint-green color (forget the name!) and wasn’t sure how I was going to like it but I actually love it!

Once I got home, I poured myself a glass of vino (rose- my fav these days!) and headed out to the back deck to enjoy my little urban oasis. My friend Jess got me this cookbook/entertainment book for my birthday and I’m loving it so far!

Have any of you read it? Not long after I settled in, RM stopped by and joined me for a drink before heading to his place to make fish tacos. We thought we had frozen some corn tortillas, but we were wrong so we enjoyed them sans tortilla. Still delicious!

Saturday I headed over to Chestnut Hill for the #streetsweat workout event lead by MOVE Fitness. In case you missed my initial blog post, check it out here. And don’t forget to enter the giveaway! I’ll pick the winner on Thursday morning. Back to the workout- it was really fun! At first I didn’t think it was going to be my type of challenging, but Ron and Sabrina did such a great job showing more advanced options as well as less advanced options so that everyone felt good during the workout. I ended up working really hard and felt it the next day. We did all sorts of fun things with the heavy sand balls, bands and our own bodyweight.

It was also great to workout with- and meet!- Lexi (Lexi’s Clean Kitchen), Rachel (Healthy-Chicks) and Michelle (Sunshine & Superfoods). Lexi had to leave the workout early to get set up for her table inside Lululemon, but here’s a post-workout pic of Rachel, Michelle and me!

We all headed into Lulu to try out some f the goodies that Lexi brought- 2 words: Holy.Yum! I can’t wait to check out her cookbook when it comes out next year!

After the event, I met my friend Jessi in the city for lunch at Granary Tavern and then we swung by our friend Amanda’s apartment in the North End. No pics, but it was such a fun little afternoon! Finally, my Saturday ended with a date night with RM- something we hadn’t done in Boston in forever!

We went to Island Creek Oyster Bar first and enjoyed some drinks and oysters, but ultimately decided we were in the mood for Eastern Standard. It was incredible- even at the prime time in Boston on a Saturday night we found seats at the bar right away at both places. It’s like they were waiting for us 😉 At ES we shared a salad, fried calamari and a lamb sausage pasta bake.

Sunday morning started with a fantastic bunch of healthy pancakes.

After, I met my sister at SoulCycle for the 11:45am class. It was a FULL room and the energy was amazing. It was our first time having a male instructor and I have to say that James L. was amazing!! He was so energetic and motivating and he had some really good dance moves at the front of the room- I would catch myself just watching him a few times!

To end out the weekend, I went to RM’s mom’s house for Sunday dinner and, per usual, it was delicious. I walked in and said it smelled delicious and asked what she cooked and she laughed saying it was sauce, duh. How silly of me!

All in all, despite the weather being less than perfect (ok New England, what’s with these rainy/cloudy weekends and perfect weather during the week?!), it was a really great weekend! Can’t wait to head up to Maine for the 4th this weekend!

This Week: Workouts, Weekend Recap, Things I’m Looking Forward To

Hi there! I hope you all had a great weekend. Mine was really fun, but also really busy. I was supposed to go to my gym friend, Jen’s, “Porch Friday” summer kickoff gathering, but after the week I had, I was beat and decided to lay low. I hate missing things, but knew I needed to take it easy since Saturday and Sunday were going to be nonstop. Instead, some wine and snacks at Piers Park helped me relax from the week.

Saturday started with a super sweaty UXF Burn/SHRED class that I subbed at the Central Square BSC (my usual gym). It was awesome to see so many of my Wednesday and Thursday regulars in class! Here’s some of my new lulu that I bought 😉

From there, RM and I headed north for a BBQ at Christy and Jaime’s. Sadly, I didn’t take ANY pictures- whoops! But everything was amazing- the food, drinks, company, weather- all in all it was a great afternoon! From there, I headed to Liz’s house for a gym friends party. I always look forward to these nights because it’s so fun to chat with other instructors and share our crazy interesting teaching stories.

Sunday started with a UXF Burn class and then RM and I went for a nice, long 3 or 4 mile walk along the beach before going to Jess and Brian’s baby shower. They had it at Shake Shack in Harvard Square. I’ve never been there before, but I am sold- their burgers and fries were amazingggg. It was such a fun baby shower- they didn’t open gifts or play any games, which is more my style. We were able to chat and mingle- perfect!

Phew! What a weekend- I love when I get to spend time with my college friends and it was fun having RM meet everyone! But, let me tell you- 3 parties and party food in 2 days makes me really ready for some clean eats. Indulgences are totally worth it (and sometimes why I workout 😉 ), though.

Last Week’s Workouts

  • Monday- I taught my 6am muscle class and did 15 minutes on the elliptical.
  • Tuesday- I ran 5 miles after work and it felt great! I had fast splits (for me!) and was able to clear my head.

  • Wednesday- My new company had their summer outing after work so I got up to workout before I headed into the office. I was going to do a 2 mile jog and then body weight strength training but ended up running 3 miles and just some push-ups, squats, planks, etc.
  • Thursday- I taught SHRED and then Cardio Kickboxing. I did a 25-15-4 rep format for SHRED and liked it!
  • Friday- Rest day since I was teaching on Saturday and Sunday.
  • Saturday- I ran 2 miles on the treadmill before subbing UXF Burn/SHRED. We worked so hard and I loved every second of it!

  • Sunday- I didn’t want to get out of bed, but I was happy I did. There were only 2 people in the UXF Burn class I subbed, but it was fun because I was able to do stuff I don’t usually get to do! Also, there was another instructor in the class who teaches Barre so I let her lead the last 5 minutes of core work and it was killer!

This Week’s Workouts

  • Monday- By the time this post goes up I will have taught my 6am Muscle Class and done a little cardio after.
  • Tuesday- I’m running the JP Morgan Corporate Challenge after work. It’s a 3.5 mile race, so nothing too crazy.
  • Wednesday- I’ll either run or do some other cardio before teaching UXF Burn. I missed them last week!
  • Thursday- Teaching SHRED and Cardio Kickboxing.
  • Friday- Probably a rest day besides a walk at lunch.
  • Saturday- Back at the Oak Square YMCA for my Cardio Kickboxing class… I hope my front row is back 🙂
  • Sunday- I would LOVE to get some yoga in. I need to make that happen.

Things I’m Looking Forward To

I’m looking forward to running the JP Morgan Corporate Challenge as part of the team at my new company. Our shirts are so dorky, but it’s kind of funny! I’m also excited to go out with some former coworkers, including my friend Tim, later in the week. Other than that, I’m excited for a weekend where I really have nothing planned. I may head to the Cape with RM on Saturday, but if I ended up sticking around here I wouldn’t be mad at all. I want to get my hair highlighted, so that would be great if I could fit that in on Saturday.

Weekly Workouts: Lots of Booty Burner Workouts!

Happy Monday, friends! How was your weekend? I was totally lovin’ the weather- how perfect was it?! I went apple picking with some of my college girlfriends and we had a blast, but I’ll catch you up on that tomorrow 🙂

Last week, even though I had planned to take it easy on Monday or Tuesday if I needed to, I realized that I was feeling refreshed and ready to be active. So, active I was, but always being mindful and listening to my body. With a that said, a few workouts left me sore, in particular, my booty and my abs… 2 areas that I love being sore after a workout! Athena said I should post my “Booty Burner” workout, so I think I’ll do that for you Wednesday!

This week’s workouts are going to be a little “TBD” for the later half of the week since I’m going to Michigan with my parents, but I’m hoping to come up with a few hotel room workouts that I’ll be able to share with you!

Last Week’s Workouts

  • Monday- After my tour of Eastie last weekend, I was itching to run to Piers Park and use the little outdoor gym area that they have. It was a nice, cool, fall night so it was great weather to run and I got to “play” in the gym which was an added bonus! Let me tell you, my abs were SO SORE for a few days after some decline leg lifts and sit ups. WOW. loved it! This gym area is a really neat resource to have for the public. They offer different level, 4 move strength and stretching workouts using all sorts of different pieces of equipment.

  • Tuesday- I got the schedule mixed up for the East Boston YMCA and Pilates was actually on Tuesday, not Monday, so I hit up the 6:15pm class Tuesday after work. It was very slow-paced, but it was nice to stretch and work my incredibly sore core. The class incorporated weights and I was able to take some of the moves into my classes- win, win!
  • Wednesday- I went for a really hot 2.5 mile jog before teaching UXF Burn. Lots of members told me how sore they were on Thursday from the class, so I guess it was a good one!

  • Thursday- I taught this workout followed by cardio kickboxing. A member asked me to include my “Booty Burner” since skinny jean weather is coming up, so I was more than happy to oblige 😉
  • Friday- I’ve decided that I don’t like to go to the gym on Fridays, so, I did 10 rounds of this work from home workout which was plentyyyy. 10 rounds ends up being 100 reps of each, which is a lot!
  • Saturday- I taught the same kickboxing routine, including the Booty Burner, from Thursday at the YMCA. I also had time to squeeze in abs at the end!
  • Sunday- I planned on going to BodyPump, but I realize I was a little sore so it wouldn’t make sense to go to a muscle class. Also, once I walked outside and saw how nice it was, I knew I wanted to go for a walk or run. I ended up running 4 miles (no idea where that came from), and felt great! I wore my older running sneakers and they felt so big and bulky and I felt like I was stomping around! I guess I’ve just become accustomed to running in the more “minimalist” style of sneaker.

This Week’s Workouts

  • Monday-Since I didn’t do weights yesterday and did lots of cardio, I’m going to go to the gym after work and do just strength and maybe this ab burner that Athena posted yesterday.
  • Tuesday- I have after work drinks with my team at work and then dinner at Jessi’s, so I’ll get up and run before work.
  • Wednesday- I am subbing Kate’s 5:30 Sports Conditioning class before teaching my UXF Burn class. Since I won’t be teaching on Thursday, I figured I’d pick up an extra class!
  • Thursday- I’m going to get up and do something before my parents pick me up. Or, maybe not. I feel like I’ll want to workout before being in the car for 8+ hours, but I may also need a break! If I do anything, it will be light (maybe yoga).
  • Friday- Not sure. I think we are getting on the road early to make the last leg of the trip, so if I haven’t slept well, I won’t get up to workout.
  • Saturday- Hopefully my sister will want to workout with me in the morning, and then hopefully lots of dancing at the wedding!
  • Sunday- Likely nothing. I have a 12:30pm flight and will probably be ready for rest.
