It’s been a hot minute since I shared my eats with you, huh? In case you missed part one, you can find it here.
I feel like RM and I have been eating out a bit more than we really want to be eating out, but now that the weather is warming up a bit (well, sometimes!), it’s just so much more fun to go out and get drinks, which usually leads to us grabbing dinner out. We leave for Italy in about 3 weeks, so I’m hoping to cut back on eating out until then. For now, here’s what we’ve been eating- enjoy!
Coconut Crusted Healthified Chicken Tenders {gluten free & dairy free}– RM came up with this recipe and he’s used it on chicken and fish and it’s quickly become a staple for us!
Italian Meatloaf– I came across this meatloaf from PaleOMG and I’ve probably made it 5 times at this point. Every part of it is so delicious and it’s been a great lunch meal.
In January, RM was doing the Whole30, so we were more limited with our meal options. Insert lettuce tacos! So good and so healthy.
Curry dishes have also frequented our meal rotations. We love this dish because it’s easy and healthy and just so darn tasty! We’ve made the dish with chicken and with shrimp and have decided we like shrimp the best.
These Smashed Sweet Potato Guacamole Bites from Running to the Kitchen were a HUGE hit at the Super Bowl party I went to.
RM’s friend Brad cooked up an incredibly delicious meal when we were up at Sugarbush. Steak and potatoes and asparagus with this super tasty salsa verde. Must. Re-create.
Lots of fish/veggie/millet meals. We are trying to eat more fish, not just in sushi form 😉
But… we do love our sushi! This is from Douzo, which is our favorite place in the city, but lately we’ve been hitting up a sushi restaurant in Winthrop, of all places. It seemed sketchy from the outside, but inside it was much nicer and it’s always packed so they’re doing something right! It’s called Osaka Lucky Garden if you’re in the area.
Oh my goodness. These Ezekiel wrap “pizzas” I’ve been making have been awesome. I just take the wrap out of the freezer, top it with whatever I’ve got in my fridge and broil it until the cheese is crispy. It’s the perfect lunch!
Our healthy 5 year old kid meal: Chicken “tenders”, sweet potato “fries”, kale and Brussels Sprouts w/Broccoli, Onions & Slivered Almonds
These Paleo Coconut Orange Pancakes from The Almond Eater were to die for! So light and fluffy but filling, if that makes sense. Couldn’t even tell they were “healthy”.
Another recipe from The Almond Eater: Vegan Cauliflower Quinoa Meatballs (served with Mama Rosa’s sauce and a side of kale and fish). RM was a huge fan of these “meatballs”, which made me happy- I love when he enjoys a new recipe I try!
Peanut Butter Banana Oatmeal Protein Balls {No Bake!}– I’ve already made 3 more batches of these balls! RM is obsessed with them and they make for the perfect pre-workout or post dinner snack!
I spent Easter with RM’s family and his sister made these unbelievable raspberry crème brule individual dessert dishes. There was jam on the bottom and raspberries inside- a fruit lovers dream!
For the meal, we had homemade pasta (crazy good), rabbit, lamb, veggies and lots of dessert. I had to unbutton my pants on the way home…
Jeveli’s for dinner a few times- I cheated on my beloved meatballs with the chicken cacciatore and was not disappointed! It’s funny because I am not a big pasta person, so I tend to just eat all the top stuff and leave the pasta. Oops!
Last week I made the most random dish, but it ended up being pretty good! I just combined broccoli, red pepper, zucchini, summer squash, diced tomatoes, kale and ground turkey topped with a little cheese. I served it with quinoa and it was a perfect lunch for the week!
We had book club on Sunday (we read The Girl on the Train- have you read it?? It was crazy, crazy good!!) and Jessi hosed and made an egg casserole, home fry things, fruit and yogurt parfaits and I made a warm kale salad (will share the recipe with you later!).
Annddd that’s it! I can finally delete all these photos from my phone now that I’ve shared everything with you 🙂
